TANK-T BAKED MANGO CHEESECAKE

MISTER M'S TANK BIRTHDAY
      BAKED MANGO CHEESECAKE


BASE: PROCESSED MELTING MOMENT

*COOKIE INGREDIENTS:

- 200g Unsalted Butter, room temperature
- 150g (1 cup) White Wings Plain Flour
- 1/2 Teaspoon Baking Powder
- 110g (2/3 cup) Pure Icing Sugar, Sifted
- 150g (1 cup) Corn Flour


*METHOD:

1 - Preheat oven to 160ºC (  ºF). Line 2 baking trays with non-stick baking paper.


2 - Using an electric mixer, beat butter until smooth and creamy.


3 - Add sifted icing sugar and beat until light and creamy.


4 - Sift flour, corn flour and baking powder together. Stir dry mix into creamed mixture with rubber spatula. You can also use your hands if it is too heavy to mix.


5 - Roll tablespoonfuls of dough into 2~2.5 cm diameter balls and place on prepared trays about 3 cm apart. Press each biscuit lightly with a floured fork. These biscuits will expand extensively and touch the sides of each other like a loaf of batch baked scones. If you are making it to serve as melting moment cookies, make sure to decrease the size of the ball you roll.


6 - Bake 15 -20 minutes or until firm. You can pull out the cookies at 15 minutes and gently tap on them to test for firmness. Cool on wire rack.


7 -  Gradually break apart the soft cookies that have cooled and put them into a ziplock bag, around 3-4 at a time and place on hard surface and use a rolling pin to tap them into pieces. Then when the pieces are smaller, roll them over until they become fine. ALTERNATIVELY, if you have  food processor, just break them into chunks and place into food processor, and process until fine.


8 -  Take specified amount and add melted unsalted butter to the processed cookies and stir with a spoon quickly until all crumbs of the cookies have been soaked with butter. *Make sure the crumbs are all mixed in with the melted butter or they won't stick as a base properly.
